🍰 Best rainbow crepe cake recipe💖

My adolescent daughter was always looking for ways to make crepe cake. Every time she mentioned it, I thought to myself, “That’s a lot of work.” Over the weekend, we finally made it. It wasn’t as difficult as I had anticipated; in fact, it was quite simple. With a little effort to make the crepes, you will have a lovely crepe cake! Because this is our first attempt, I don’t have any videos. When I make it again, I’ll post a video of the entire process. It was a lot of fun.

Here is the recipe and how we made it. This recipe can make about 18 pieces of crapes in 6 inch pan.

Ingredient (for 10-12 servings):
120g Cake flour
2/3cup+4tbsp
4pcs Eggs
50g Unsalted Butter
60g Sugar
1/4cup+3/4tbsp
400g cold Milk
1cup+1/2cup+2.5tbsp
Food color ( Pink, Orange, Yellow, Green, Blue, Purple) or your preferred color selection

Heavy whipping cream 2.5cup+1.5tbsp
50g Sugar 1/4cup

Preparation:
1. In a bowl, sift the flour. Mix in eggs until the batter is creamy.
2. Put butter, sugar and half of the cold milk in to a small pot. Leave the other half of cold milk on the side. On low heat, mix the butter and milk constantly until the butter is melted. Remove the pot from heat. Pour the other half of the cold milk into the butter milk mixture in the pot. Mix well. The cold milk will drop the mixture temperature to about 85F.
3.Now pour the mixture in step 2 into flour and egg mixture in step 1. Mix well. If you prefer, you can sift the mixture to get a more smooth texture. I skipped this sifting step. This batter is ready to use or you can leave it in the fridge for 2hour for a better result.
4. Evenly divide the batter into 6 bowls. Add a few drops of food coloring to each bowl, and whisk until fully incorporated and the batter is colored.
5. On a nonstick skillet over medium heat, pour â…“ of the one color of the crepe batter, and tip the pan to cover the entire bottom surface.
Wait until the crepe is bubbled, then flip the crepe. Wait about 20s. The crepe is ready. Move the crepe from the pan to cooling rack.
Tips: Make sure you don’t wait for too long. The crepe will be dry and burnt. Repeat the step for each of the bowl. You will get 3 crepes for each color. Total of 18 pieces of crepes.
6. Combine cold heavy cream and sugar in a bowl (chilled bowl is better). Beat the ingredients with an electric mixer on medium high speed until cream is thick and billowy and stiff peaks form.
7. Stack crepes on top of each other, starting with purple, then blue, green, yellow, orange, and pink, with whipped cream between each layer (you are do your own order). Then cover the outside of crepe cake with whipped cream. So now it looks like a white cake. You can also decorate it more! But I stopped here.
