What should I make for dinner that everyone would enjoy, particularly the kids? What easy-to-prepare dinner should I make? Those are the questions that most mothers ask themselves on a daily basis, especially if they are working mothers with many children who have diverse supper preferences.
This is a problem I face every afternoon as a working parent with three picky eaters. I want something that is both nutritious and yummy for the kids, and I also need a meal that is simple to prepare.
Some of my friends advised me to order takeout, I wouldn’t eat fast food and order delivery every day. In my opinion, the majority of restaurant takeout food is unhealthy. While some restaurants offer healthy options, the vast majority do not. Why? To ensure that everyone enjoys the dish, they must make it delectable. Researchers discovered that both fast food and dine-in restaurants have higher levels of cholesterol and trans-fat than what you can make at home. We occasionally order takeout, but I wouldn’t do it on a regular basis. Another reason is that it is quite expensive. not economically efficient.
Today I’ll share with you a relatively simple dinner recipe that all three of my children enjoy. Woo-hoo! Finally, a meal that everyone enjoys! Isn’t it thrilling?!!
Ground Beef Tacos, Salsa, Flavored rice, black beans!!

Ingredients:
- Tomato Seasoning Mix: Any package of taco seasoning from the grocery store. I like the original flavor. (1 packet)
- Ground Beef: A simple ground beef, 70-80 percent lean, is the best meat to use for taco meat. The fat will add flavor to the meat, and we can drain it before serving. (1lb)
- Fresh Roman tomatoes. 3 -4 ct.
- Fresh Sweet onion 2 medium to large size.
- Fresh Cilantro 2ct
- Fresh Romaine hearts 1-2 ct
- Fresh Avocado 2ct
- Black Bean 1 can.
- Shredded Cheese
- Long grain rice 1 cup
- Fresh Garlic cloves 4-6 ct
- Tomato/Pasta sauce 1cup
- Taco shells/soft or hard shells. I used Old El Paso Taco Shells stand and stuff. 10-15 depends.
- Tortilla (1 package or half)
- Fresh Lime. 1ct
- Jalapeno – Optional. My kids can’t eat spicy food, so I didn’t put any.
- Sugar, salt and pepper.
Steps:
- Prep the ingredients:
Roughly chop the tomatoes, chili peppers (optional), onions, Cilantro, Galic cloves. Cut the lime into half. Wash all the veggies. Cut the romaine lettuce into slices. - Make the salsa:
1). In a food processor fitted with a blade, combine Onion, Chili pepper (if applicable), tomatoes, Cilantro. Only pulse a few times, just enough to finely dice the ingredients without puréeing them. If you don’t have a food processor, finely dice the vegetables by hand.
2) Place everything in a serving bowl. Season with salt and pepper to taste. Squeeze half of the lime juice into the bowl.
3) Allow the salsa to sit for an hour (at room temperature or chilled) to blend the flavors. There’s no need to worry if you don’t have enough time. It already tastes very good without having to sit for an hour. - Ground beef:
1) Over medium-high heat, heat a large skillet. In a heated skillet, crumble ground beef, add 1 or half cup chopped onion. Cook, stirring occasionally, for 7 to 10 minutes, or until the beef is thoroughly browned. Any leftover grease should be drained and discarded.
2) Pour seasoning mixture into the ground beef, stir to combine. This should take about or less than 1 min. After the seasoning mix is combined, pour in 1 cup of water. Cover the skillet with lid. Let the beef cook for 50-10min, until the moisture absorbs into the meat. - Flavored rice:
In a small saucepan over medium heat, melt one teaspoon butter. Add 1/2 cup onion when the butter has melted. Cook for around 1 minute to release the onion’s flavor. After adding 1 cup long-grain rice, cook for 2-3 minutes. Give the mixture a brisk swirl every now and then. Then add 1 cup tomato sauce and two cups of water, stirring carefully after each addition. Cook for 10-15 minutes on medium to low heat. Stir every now and then. - Black beans:
Heat 1/2 teaspoon oil in a medium-sized skillet, then add the chopped garlic and onion. Allow a few minutes for the mixture to simmer. Mix in one can of black beans thoroughly. Then add a pinch of salt, 1 teaspoon cumin powder, and 1/4 cup cilantro to taste. Cook for 1o-15 minutes, covered with a lid. - Heat the taco shell in the oven according to the instructions on the package
- Heat the tortillas in the oven for 5mins or less.
